"Tale as old as time, Song as old as rhyme, Beauty and the Beast" is basically a fairy-tale, like when the princess kisses the frog, or when the prince saves Rapunzel. Its saying that Belle has fell in love with a beast, not a prince. Even though the beast doesn't have the looks, Belle looks beyond his tough skin and sees a sensitive guy, just wanting to be loved.

All of the servants know that they're in love, so do Belle and Adam except, Adam doesn't think that Belle could love a beast, such as himself. Belle ends up falling in love with him because of his personality, not his looks, as it explains further in the song.
